Deer are probably the worst threat to fruit production around the northern states. Raccoons and squirls will also climb trees and nock off fruits and eat them specially in stone fruits: cherry and peach. Rabbits will eat the bark girdling a tree to death in the winter also. Birds are a great problem in blueberries but in all fruit to a small degree.

In general there are scents to buy that will keep specific animals from coming around. These only work where the animal has other foods besides your garden. Often they work in small locations like a backyard.
There are two methods for discouraging animals by scent. The first is by making it smell like humans. This works for a few weeks at a time until they get used to it and don't trust their instincts. Human Hair, soap, ground bone meal (tankage), and other similar products have worked.
The second is to uses hormone type scents to keep animals out of your backyard and gardens. My personal feeling on these are they can help but don't count on them. There are always animals that will not be tricked and they always seem to be the ones in your yard.
The solution is to always do everything you can to deter the animals from enjoying your yard!
Mechaical devices and obsitcles are the only truly effective way to keep animals form your crops.
